How to make a homemade kulfi

Kulfi:


Who doesn't like ice creams?
 especially kulfi, it hooked us towards its delightful taste.

 Kulfi is absolutely an Indian sweet dessert, ice cream on a stick which is extremely rich in its flavourful taste.

I love kulfis, not only for the taste but also it reminds me of my happiest treasury memories of my childhood. 

My mom and I often used to have this in a small kulfi shop near the market side.

 I still remember that unique taste, creamy soft texture and the crunchy nuts on every lick, hardly kick my taste buds wanting more...I bet you can't stop at one like us. 

Eating kulfi is just like heaven during summer though, can't wait for summer and all, let's enjoy it today.

Ingredients:


  • 2 litres of milk (Full cream) 
  • 1/4 cup cream (optional)
  • 1/4 cup of sugar
  • 2o no.of almonds and pistachios (roughly chopped) 
  • 2tbs of saffron milk
  • 1/2 tsp cardamom powder

Method:


  1. Allow full cream milk to boil in a thick bottomed pan.
  2. Then add fresh cream and give it a good stir and simmer it for 30 minutes.
  3. After that, add sugar and mix well. simmer for 5 more minutes until the milk thickens completely.
  4. Now, add the chopped nuts, saffron milk and cardamom powder, mix well and simmer for 5 minutes.
  5. Switch off the flame and allow it to cool, then transfer it to the kulfi moulds or any plastic containers by covering it with cling wrap or aluminium foil.
  6. Allow it to freeze overnight or at least 8 hours to set completely.
  7. After removing it from the freezer, insert a stick in between the kulfi, then slowly warm up by rubbing in between your hands. You can also dip it in the warm water and gently remove it from the mould.
  8. Finally its ready to serve.

Kulfi's  Variations are endless like malai, rose, mango, strawberry, badam, pistachios etc...

You can always go with your imaginations and create your own memories while enjoying it!

I dedicate this recipe to my mom to cherish our sweet memories. 

Tip:

If you don't want to stand in front of the stove for several minutes, then you can reduce the quantity of milk into half and substitute it with condensed milk so you can cut down the time and labour.
